Fish Lane welcomes Saccharomyces Beer Cafe

What originally started as a home brewing partnership has gradually turned into a fully-fledged craft beer venue, now sitting pretty on fashionable Fish Lane in South Brisbane.

Luke Gardiner and Simon Booy became good friends through a love of amateur home brewing, a passion so strong that the trio decided to try their hand at opening their own brewery. Some time on and the idea has mutated somewhat, and with the help of Simon’s siblings Dirk and Felicity have recently opened Saccharomyces Beer Cafe – a fresh take on modern gastropub dining – located in South Brisbane. After coming across a newly developed site in Fish Lane, the group set about kitting out the space with comfortable furniture, custom-built tables, unique light fixtures and a kitchen. Retaining their love of craft beer, Luke, Simon and Dirk have made beer a strong focus of the offering – installing ten taps pouring a range of brews from Australian and international breweries. Three taps are dedicated to easy drinking brews such as lagers, pilsners and pale ales, two taps dispense IPAs while the rest offer a mix of saisons, dark beers, sour beers, red and brown ales and a rotating special. The bar also stocks bottled beer varieties and a neat selection of wines.

Saccharomyces offers a breakfast menu that includes artisan dishes such as smashed peas and cayenne pepper on sourdough, nasi goreng with fried eggs, breakfast tacos and French toast. The bar also serves lunch and dinner, with a hybrid offering including sliders filled with Indonesian braised beef and slaw, lamb teriyaki and haloumi and satay chicken as well as a range of Indonesian spiced wings, tacos, smoked cheddar mac and cheese, hoagies, potato roti with dry cured bacon and quail eggs and charcuterie boards. Head chef Johanna Possumah adds her flair to each dish and instils the distinct Indonesian influence in the menu. All produce is sourced locally and meals will rotate seasonally. Takeaway options are available for breakfast and lunch, as are delicious cups of coffee from The Artisan Coffee Roaster.
