If you have planned your pavlova, baked some lamingtons, set up the backyard cricket game and readied some iconic Australian tunes, then all that’s left is to consider what’s going to be grilling on your Australia Day barbecue!

If it’s seafood you are looking for, then you need to get yourself down to the Jan Powers Farmers Market at the Brisbane Powerhouse where Eddie Walker from Rufus King Seafoods will have a selection of tempting seafood to satisfy the most discerning Aussie palate. You’ll find green tiger prawns, scallops, whole snapper, green Moreton Bay bugs (which are extra large at the moment, perfect for halving and grilling on the barbecue) as well as a selection of filleted local fish including salmon, swordfish, flathead, snapper and mahi mahi.

If you need some condiments to go with your feast, pick up some Emelia’s – The Saucy Australian aioli or tartare sauce and garlic and chilli oil, perfect for drizzling over your seafood pre-grilling. There will also be Simon Johnson Thai marinade on offer that will turn the simplest of seafood into an international signature dish.
