One of the core tenets of innovation is to think outside of the box. Well, that’s all well and good, but when it comes to pizza sometimes it’s best to think within it. Prego Pizzeria is bringing square stone-baked pizzas to Hamilton, dishing out traditional Roman-inspired goods by the slice, bolstered by a choice selection of antipasti, salads and drinks.

The name Simon Barakat might not be immediately familiar to most of you, but if you consider yourself one of Brisbane’s more knowledgeable foodies then you’ve certainly heard of Gino’s. The iconic Hamilton restaurant has been dishing up quality food for more than three decades, and Simon’s family has been at the helm the entire time. In addition to Gino’s, Simon is also responsible for Il Verde, meaning any new project he undertakes is big news to us. Prego Pizzeria is the newest addition to his burgeoning portfolio – a pizza joint that is breaking the mould with an offering yet unseen around town. We’re talking about pizza, sure – but not just any pizza.

So, you’re familiar with round, wood-fired pizzas, right? Well, Prego is delivering something different but equally as tasty. The square Roman style stone-baked pizzas available here are similar in principle, but are markedly different in dough composition and shape. We all love re-heating leftover pizza the next morning, but it rarely stacks up compared to when it was freshly cooked. Stone-baked pizzas are designed to be just as good after reheating thanks to dough that is roughly 80-percent water. Crispy on the base so it holds and doesn’t get soggy, rectangular in shape to ensure it’s easier to pick up. The red and white-based options will be familiar to most, with classics such as margherita, sopressa and gamberi sharing menu space with roast potato, tallegio and pancetta bergamo, Italian sausage, mozzarella and friarielli ripiena. Pizzas will be available by the slice, four slices, eight slices and a dozen slices, supported by antipasti bites and salads. Those that feel like dining in can pair their choice with beer or wine, but don’t be afraid to ask for a box for takeaway – these slices are just as good the next day.
