Snub winter and pretend it’s summer with a Pimm’s Cup

While our ex-pat friends in London are soaking up the first joyful rays of summer, we’re already in hibernation mode trying to avoid the early onset of our comparatively weak winter.

Luckily, the Brisbane winter can often bring with it sunshine-filled days. So why not rug up in multiple layers and snub the cold by ordering a jug of Pimm’s for an afternoon tipple in the sun.

Pull up a day lounge on the rooftop at Lady Lamington in Fortitude Valley and tuck in to a Pimm’s Cup. Made with fresh fruit, citrus and mint, and topped with ginger ale and bubbly lemonade, this refreshing summery beverage will hit the spot once you’ve finally defrosted in the sun.

Enjoy the hop between the grassy riverside knolls and the European-esque wicker tables at Popolo at South Bank’s River Quay, where the Pimm’s Jug also comes with lashings of fruit, lemonade and ginger ale. Or if dim-lit seclusion is more your style, try the decadent Pimm’s Royal at Cabiria at The Barracks. A simple concoction of Pimm’s and Sparkling Wine, hibernate in the raspy red interior of this luncheonette and oyster bar.
