If the fast-pace of the Valley gets to you, take refuge in a new laid-back watering hole that has quietly opened on Ann Street, offering top-shelf spirits and delicious cocktail concoctions.

In January 2016 a new bar stealthily opened its doors to the public, offering a range of international spirits and some of the best cocktails in town. Situated in the space formerly occupied by Fourth Wall, Pillar Bar is a cosy spot where stellar customer service and brilliant bespoke drinks are vital. Pillar Bar is owned and operated Christopher Pezet, who has numerous years of hospitality work under his belt. Taking over the space in late 2015, Christopher updated the feel of the bar but adding new wooden booths, mandala murals and hip wall art to create a casual space in which one can take shelter from the hustle and bustle of Fortitude Valley.

Drawing upon his extensive knowledge of the world of cocktails, Christopher has designed a sizeable menu of drinks that blends old school style with new school flavours. The mix masters at Pillar Bar are utilising herbs and spices for many cocktails, even adding chilli to a number of zesty concoctions. The Isle of Shrub cocktail mixes peated whisky, rosemary syrup and orange bitters into a memorable blend, while the Wooded Boulevardier boasts bourbon, Campari, marsala, bitters, cloves and orange. The bar is filled to the brim with a huge selection of whisky as well as boutique rums, vodkas and gins and a small selection of craft beers from the likes of Green Beacon are also available, as is a small selection of wines.
