Pavement Whispers: Volume 333 November 9

From news of an other-worldly restaurant and bar to a gooey cookie pop-up, The Weekend Edition is always on the search for the latest food news in Brisbane, dedicated to ensuring its readers are in the know. When we put our ears to the pavement this week, this is what we found out …

Knowhere
Get ready to set off on the road to Knowhere, a new bar and restaurant opening in Spring Hill next Tuesday November 16. The finishing touches are currently being applied to the space, which promises to transport diners to a dream-like world upon entering. The design concept has been led by designer Chris Schneider in collaboration with Stuart Howard and Ben Milne of Brave Folk, inspired by the works of Alexander McQueen and Salvador Dalí. Inside the other-worldly space you’ll be wining and dining amongst an eclectic mix of oddities – think martini-sipping flamingos, floating elephants and astronauts straight out of the cosmos. Ex-Baja and Sirromet chef Marty Coard will be at the kitchen’s helm, serving up modern Australian dishes crafted from hyper-seasonal local produce, featuring house-made dry-aged, smoked and charcuterie meats. Overseeing libations will be head bartender Joel Gough, who has curated a menu featuring exclusively Australian house spirits, independently sourced craft beers and bespoke cocktails. Knowhere will be open for breakfast and lunch seven days a week, with dinner and drinks from Tuesday to Saturday. Keep an eye on The Weekend Edition for an inside look soon!

Ginger’s Kitchen Pop-up
If you’re yet to experience a Ginger’s Kitchen cookie, please, we implore you, do yourself a favour. The perfect balance of crunchy and gooey, there’s a reason these market favourites are often sold out before you can say “me want cookie!”. Usually you have to wait until market days to get your hot little hands on a Ginger’s cookie or baked good (you can find them at Brisbane Marketplace Rocklea and Jan Powers Powerhouse Markets on Saturdays, and Milton Markets on Sunday) but from now until December 24, you can find them seven days a week at Ginger’s Kitchen’s Indooroopilly Cookie Pop-up. You’ll be able to select from a variety of OG and new cookie flavours, including triple choc and sea salt, Oreo choc chip, and injected cookie flavours Biscoff choc chip, salted-caramel chip and Mars choc chip. Be sure to keep an eye out for special-edition flavours as well – we hear a Christmas-themed peppermint bark is on the horizon. To find out more, head to Ginger’s Kitchen’s Facebook page

Grill’d Impossible Burger
Continuing to evolve its plant-based burger offering, beloved burger chain Grill’d has today introduced Impossible Burgers to its menu, making the national brand the first in the country to offer Australians a taste of the world-renowned patties. For those unfamiliar, Impossible Burger patties are made to look, cook and taste like real beef – while being entirely plant based – claiming to satisfy even the most devout carnivores. Grill’d has introduced four Impossible Burgers to its menu, each with a signature Grill’d flavour – the Impossible Simply Grill’d, the Impossible Vegan Cheeseburger, the Impossible Garden Goodness and the Impossible Australian. To celebrate the launch, social media larrikins The Inspired Unemployed have taken the concept of food porn to the next level with a series of seductive videos, available exclusively via an OnlyFans account created by Grill’d. If you’re eager for a little NSFW saucy bun action, head over here. If that wasn’t enough to get you hot under the collar, burger fanatics will be able to taste the entire new Impossible Burger range for just $5 each when they sign up to Relish, the Grill’d membership program. This offer is available from November 9–30 – jump over to the Grill’d website to sign up.

In case you missed it …

Evita
They say where there’s smoke, there’s fire … and in the case of Fortitude Valley’s upcoming restaurant Evita, where there’s smoke, there’s a 110-year old woodfire oven. The combined effort of Icatha Hospitality and Salt Meats Cheese, Evita is set to bring a slice of old-world South American hospitality to the heritage-listed McDonald’s Bakery building on The Valley’s fringe. On Wednesday November 17, the building’s century-old oven will fire up once more, becoming the woodfire-powered engine for the relaxed restaurant, bar and lounge highlighting the scintillating flavours of Argentinian cuisine. Although not a dedicated steakhouse, Evita will celebrate steaks cooked and served in authentic flame-licked Argentinian style. Premium black Angus beef and other proteins will be tenderly cooked over wood, while the rest of the menu will encompass small plates and a sizeable selection of vegan- and vegetarian-friendly options. The oven will also be used to produce Evita’s own smoked salts and will help add smoky finishes to the bar’s cocktail ingredients. Speaking of beverages, Evita will boast a 250-strong wine list and a curated selection of crafted sips. To find out more, head here.

Miss Midgley’s
The building that sits at 135 James Street has assumed many identities since its construction in the 1860s. At various stages of its existence the structure has been an orphanage, the residence of a former Queensland premier, a private hospital and a school, adopting a different name at nearly every stage. The building’s latest identity pivot will bridge history with the present in a harmonious way, drawing upon the site’s endearing past as a house of learning as the inspirational foundation for Miss Midgley’s, New Farm’s soon-to-open boutique accommodation destination. Mother-daughter duo Lisa and Izzie White – both graduates from Masters of Architecture at University of Queensland – are spearheading this significant revitalisation effort, transforming the two-storey stone dwelling into a collection of chic apartment lodgings just a hop, skip and a jump from one of Brisbane’s most fashionable precincts. Works are currently underway refurbishing the building’s interior and surroundings. Lisa and Izzie are going to great lengths to preserve and celebrate the location’s unique natural beauty, demolishing false ceilings and floors, and removing layers of rendering on the walls to uncover as much of the structure’s original fabric. Upon completion, Miss Midgley’s will boast five two-bedroom apartments (three of which will be dog-friendly), each featuring its own modernised kitchen and bathroom. Excavation and levelling works around the building will lay the foundation for a pool and a motor-court-style exterior inspired by European villas, with native foliage adding a touch of lushness to the landscaping. Miss Midgley’s is targeting an opening date before Christmas – head over here for more details.
