When we put our ears to the pavement this week, this is what we found out …
What do you get when some of Brisbane hospitality’s finest team up with a pair of acclaimed designers to craft a memorable drinking and dining project? You get Fredericks, a pop-up wine bar currently taking shape in West End. Paul McGivern and Bailee Dewes of La Lune Wine Co and Corella fame have joined forces with Daniel and Amelia Miletic of One Fish Two Fish and interiors and production experts Jon Dowding and Chrissy Feld on the Fredericks concept, which will open on Factory Lane in West Village in early September. Named after Frederick Peters, the founder of the ice-cream factory that forms the heart of the West Village precinct, the pop-up bar will offer an expertly curated selection of wine, craft cocktails and beer, as well as a menu of cheese and charcuterie supplemented by morsels from West Village’s The Garden Pantry (Salt Meats Cheese, Cheeky Poké, and Mr Bunz). The open-plan space will be designed by Jon and Chrissy (who boast Mad Max, Gold Coast Tourism Corporation and Hostelworld’s viral Sand Hostel, and Libertine Parfumerie in their design portfolio) and will reportedly draw inspiration from the ice-cream experience – the colour, flavour and even the packaging – evoking joy and nostalgia simultaneously. Fredericks will open next month, and is expected to give guests and glimpse at the kind of hospitality planned for West Village’s forthcoming laneways.
As each week passes, Elizabeth Street’s pan-Asian food precinct FudoDori fills in another space with a new culinary concept. Following on from the initial openings of LUCHA Kitchen + Bar and Koto Sanpo (plus last week’s arrival of Japanese barbecue spot Yakiniku Hachi) FudoDori is set to welcome hole-in-the-wall dessert dispensary Amai Kawaii this Thursday August 22. Amai Kawaii specialises in loaded crepes – both sweet and savoury – as well as towering parfaits and a range of colourful kakigōri (Japanese shaved-ice desserts). Crepe fillings include peaches and cream, Nutella, chocolate and banana, strawberry compote and cream cheese, teriyaki chicken and mayo, and tuna and wasabi mayo. The jaw-dropping parfaits come with the likes of caramel pearls, chocolate almonds, mango and more, while the kakigōri selection will officially be unveiled next week. The FudoDori fun doesn’t stop there – a vibrant Thai restaurant will soon open next to Amai Kawaii, while a handy sushi and poke spot is taking shape down near the precinct’s Charlotte Street end. Burger lovers of Albany Creek – you’ll soon have a top-flight burger bar to call your own come September. That’s right, Fritzenberger will be opening its third location (following spots in Petrie Terrace and Wilston) next month, bringing with it its menu of frites, burgers and other munchies – not to mention its selection of frothy craft beers, brewed and delivered straight from the tanks at the Petrie Terrace location. Although the exact location of the new spot is being kept secret for now, rest assured that the sessionable beers and hand-crafted burgs will be top notch as always. We’ll have more information for you as it’s revealed.
As we approach the end of August, we get tantalisingly close to the start of spring, which means pretty soon we’ll be able to enjoy loads more seasonal goodies. Coorparoo fish and chippery Perch’d is wasting no time in getting us hyped for the change of season by announcing some new menu items joining its established roster of morsels. Headlining the new additions is Perch’d’s very own take on the fish taco, which will come loaded with panko-crumbed fish, salsa macha (a house-made salsa described as chilli-laced peanut butter) cabbage, fresh herbs and lemon wrapped in a soft tortilla. Once you’ve chomped your way through a few of those, it’s time to move onto the diner’s second spring item, soft serve! Perch’d is celebrating warmer weather with chocolate and vanilla soft-serve ice-cream, available as a single flavour or a colourful twist combo. Suckers for soft serve can also expect some fruity flavours to make its way into the rotation as the year progresses. Bring on spring!
One of Australia’s best gin labels is taking over one of Brisbane City’s best cocktail bars this Friday August 23. Four Pillars Creative Director of Gin Drinks (yes, that’s a real title) and acclaimed bartender James Irvine is teaming up with The Boom Boom Room’s own Joseph Chisholm to deliver a special gin cocktail experience for one night only. The duo will be pouring some on-trend concoctions that are a few notches above your regular gin and tonic, including the Gheenius (made from Pure Kisumé Gin, ghee, passionfruit husk, black cardamom and ginger), the Wild Strawberries (Rare Dry Gin, strawberry and coriander), the Night Falls (Bloody Shiraz Gin, hazelnut, sour plum, burnt miso) and an elevated G&T (Rare Dry Gin, Fever Tree Mediterranean tonic and orange). Although entry is free, those looking to get up close and personal with James and Joseph can book in for a special experience, where you’re likely to pick up a few cocktail tips to take home.
