Pavement Whispers: coastal hues, seafood snacks and vino – what to expect from Restaurant Labart’s wine-bar sibling Paloma

If you’re a Gold Coast local and you haven’t heard of locale Restaurant Labart, you may have been living under a rock. Just kidding, but seriously – if you’re yet to discover it, you’re in for a treat. Lovers of the Burleigh Heads fine-dining gem will be delighted to hear that hospitality power duo Alex and Karla Munoz Labart will soon open a brand-new wine bar just around the corner. It’s called Paloma – here’s everything we know so far.

Set to open at the heart of Burleigh Heads’ effervescent James Street hub this November, Paloma will make for a welcome addition to the precinct’s stellar line-up of drinking and dining destinations. Hitting the sweet spot between sunset sips or post-dinner drinks, the spunky newcomer will sit pretty just around the corner from its sister venue, positioning itself as a relaxed and welcoming space for patrons to discover new drops and to savour small plates. As the name would suggest, Paloma Wine Bar will be heavily focused on vino. A solid selection of by-the-glass wines will mean that visitors can stay a while, step out of their go-to wine comfort zones and discover new sips. The ever-changing offering will feature winemakers from Australia and further afield, while also showcasing a clutch of classic cocktails and a snappy seasonal signature list.

Although the venue will be centred around quality drops,  there will also be a small selection of delicacies to nibble on from chef Alex Munoz Labart and his team. Think smoked mussels on toast and beef tartare, together with Labart’s famous (or should we say infamous, for its lightning-fast sell-out time?) ‘La Burger’. For those looking to elevate their weekend, we expect that Paloma’s Saturday and Sunday morning seafood brunches will be the place to be over summer. Expect oceanic delights like freshly shucked oysters, ceviche, crudo and lobster rolls to grace plates from 11:00 am each morning. The coastal theme will continue with the bar’s fit-out. We’ve been told to expect an interior that speaks to its beachside locale – leather banquettes in marine blue hues, hand-blown glass pendant lights from Soktas and ocean-green tiles.
