We can usually trust Bunker in Milton to be open to calm our caffeinated needs when a public holiday rolls around – affording those who don’t reside or work in the area an indulgent trip to this weekday-only haunt. This Good Friday, Bunker will indeed again be treating tastebuds, but not with the usual espresso-based creations. The espresso machine will be rolled away, making room for the coffee wizardry that occurs for Bunker’s annual black coffee day. The hole-in-the-wall haunt will be brewing next-level all-filter coffees from Brisbane’s Cup Coffee Roasters, the UK’s Small Batch Coffee Company, Melbourne’s Code Black Coffee Roasters and Proud Mary Coffee Roasters. There are many fine artisans who have mastered the craft of cold brew of late and another to add to the lauded list is North Carolinian collective, Slingshot Coffee Company. In addition to roasting its own single-origin beans, Slingshot takes a seasonal approach, changing its beans depending on the time of year so that it is always using the freshest crops. The team then hand brews and bottles the cold press in small batches, adding only one other ingredient – filtered tap water – to allow the beans’ flavours to shine. The company produces two cold-coffee varieties – a ready-to-drink cold brew served neat over ice, and a coffee concentrate, which can be topped up with hot or cold water or milk as desired. And if you’re partial to taking your coffee in nightcap form, Slingshot lists a number of intriguing ways to use cold brew in your home cocktail creations. more

A motivated and passionate teacher may very well leave an indelible impact on his students, but Stephen Ritz from the South Bronx is also leaving a positive impact on the landscape. The teacher enlisted his students – many of whom are homeless, living below the poverty line and have disabilities – to build an edible, vertical wall in their classroom. The project soon gained momentum, eventually spreading to the surrounding communities, feeding students and residents, and attracting attention around the world.
