Nick’s Chocolates makes single-origin bars in Salisbury

Once a form of currency and only consumed by the most prosperous Mesoamericans, these days the cocoa bean takes on many forms and levels of purity. However, the most passionate artisans of the moreish treat have pared back the making process, creating honesty in the bean-to-bar approach.

Founded in 2012, Nick’s Chocolates is the creation of Nicholas Whebell. The Salisbury-based maker completes all elements of the brand by hand – from the sorting of the beans to the careful wrapping of the label around the resulting chocolate. Each bar is handcrafted from cocoa sourced from a single location and using Australian cane sugar. These gluten-free single-origin chocolates bring highlight the varied flavours within chocolate, with notes of cherry, caramel or citrus standing prominent depending on origin.

While not all of the beans used in Nick’s Chocolates boast an official fairtrade certification, Nick ensures all of his ingredients are acquired through socially aware and ethical means, with the uncertified cocoas sourced from co-ops working directly with farmers or with which Nick has a direct relationship. This ensures healthy business practices are in place with the cocoa farmers, assisting these communities to grow and become self-sufficient and sustainable.

Nick’s Chocolates currently offers four varietals of dark chocolate, including an Ecuador 70%, Papua New Guinea 73%, Venezuela Canoaba 75% and Peru 80%.
