New Sushi Pod pops up in Fortitude Valley

Inspired to foster the burgeoning sense of community that has begun to emerge on the fringe of Fortitude Valley, local engineer John Tuxworth created his own urban reinvigoration experiment, Sushi Pod.

The pop-up sushi haunt is located on Hynes Street, just in front of Tonic Espresso Bar. Sushi Pod’s menu was designed by sushi chefs from Kadoya Japanese Restaurant to offer a fresh and simple lunch option for those in the area, and also provide a taste of the art of Japanese food presentation.

During the warmer months there will be seven types of sushi on offer, including Salmon Avocado, Mushroom, Spicy Chicken and Sukiyaki Beef, as well as a selection of Japanese drinks. In winter, warm Japanese curries and soothing bowls of miso soup will be added to the selection of offerings.

As the managing director of BE Collective, John has a keen interest in the sense of community that can stem from interaction with the streetscape. Following his work with the Emergency Shelter Exhibition earlier this year, and collaboration with QUT’s School of Design, John arrived at the idea of creating a small structure that could bring new meaning to the street his office is located on. In creating the pop-up experiment, BE Collective collaborated with Sydney architect Jun Sakaguchi and Redwood Developments.
