New executive chef takes the reins at Peasant and Cabiria

Jonathan Bryant has been appointed the new executive chef across both sister restaurants Peasant and Cabiria at The Barracks. Amongst his resume is time spent at local establishments Anise, Cha Cha Char and Montrachet, with Jonathan using his experience in Australia and overseas to craft a new season European-inspired menu for Cabiria. Plates such as the Slow-braised Lamb Shoulder with Fresh Fig Salad and Blue Cheese Sauce and a Duck Liver Pate with Pedro Ximenez and Peppercorn Jelly will feature alongside the bar’s extensive wine list. Peasant will, too, be sporting a refreshed menu in the not too distant future, courtesy of Jonathon’s new role.
