Whatever else you’re doing right now, stop. Sit down. Take a minute. You’re going to want to give this your full attention. Gresham Lane has just welcomed a new eatery, specialising in the pure mouth-watering beauty that is grilled cheese. We’re not talking plain-old lacklustre toasted sandwiches here kids – these guys aren’t messing around. Introducing your cheesy new best friend, Melt Brothers Grilled Cheese Co.

Okay, real talk. I’m finding it hard to write this article because I can’t. stop. looking. at. that. damn. melted. oozing. stringy. cheese. in the photo above. Do I even need to write anything? If I’m distracted I bet you are too. For those who have managed to continue reading (good for you!), allow me to take you on a little journey to cheese heaven (insert Cheesus joke here). Melt Brothers comes from actual real-life brothers Justin and Felix Kong, who are sharing their love of the humble grilled cheese sandwich with the hungry folk of Brisbane. You may already be deliciously acquainted with Justin’s previous work – he’s one of the brains behind Miss Kay’s burger joints – which should give you an indication that Melt Brothers doesn’t do things by halves.

You can get your cheese fix from early in the morning, with three all-day sandwiches served from 7:00 am. If you’re a grilled-cheese purist then look no further than The Mouse Trap – a triple-cheese masterpiece oozing with havarti, American and aged cheddar cheese, plus a slather of dijon mustard for added kick. Those ready to take their AM to greater heights need look no further than the Morning Glory, packed with maple bacon, two fried eggs, cheddar cheese and sriracha mayo. Come 11:00 am, you’ll find the likes of the M.C. Cheesy filled with macaroni and cheese, maple bacon and cheddar cheese, the Godfather with salami, napolitana sauce, basil and two kinds of mozzarella, and The BFC – buttermilk fried chicken with slaw, buffalo sauce and aged cheddar. Ungh. Gluten-free, vegetarian and even vegan friends are catered for (yes, vegan ‘cheese’!), so you don’t have to exclude them from your grilled-cheese binge. Melt Brothers only has one side dish, but it’s tater tots (potato gems), so how can you be mad about that? They come with house-made seasoning or loaded with cheese sauce and bacon, and you can even get them smushed into your sandwich for extra carby goodness. Wash it all down with a cool drink, Fonzie Abbott coffee, beer, wine or cider. If you can manage to stop the cheese, please leave room to grab Dem Buns – that’s toasted sweet buns filled with vanilla ice-cream, Nutella and 100s & 1000s.
