The Michelin Star Chef will offer a rare insight into his unique take on modern Italian cooking, while guiding students to develop their own individual palates and tap into their creativity in the kitchen. Alongside his sous chef Taka, Massimo will walk you through creating 12 traditional Italian dishes, including his world-famous Emilia burger and food-waste solutions passatelli with ‘broth of everything’ and ‘better than panettone’ souffle. Once you’ve mastered Massimo’s Italian, turn your chef’s hat towards a range of other classes such as French pastry with Dominique Ansel and Texan barbecue with Aaron Franklin.
