Patisserie pioneers Madders Brothers are giving sweet treats the ultra-luxe treatment they deserve, opening a lush flagship location in the heart of Brisbane City. With a plush design to match the high-quality treats, this spot is making five-star treats more accessible than they’ve ever been.
Top-flight pastry chef Paul Madders cut his teeth working in five-star hotels and in various top-tier institutions abroad, but upon returning to Australia found the awareness of the sweet-treat art form lacking. To fix this, Paul and his brother Luke decided to create and serve the same kind of five-star sweets through a more accessible avenue. Over the past decade, Madders Brothers Patisserie has served their brand of edible artistry from its locations in Jamboree Heights and Corinda, building its formidable reputation through word of mouth. This grass-roots approach to promotion has fostered a cult following, with demand increasing year on year. Seeing a chance showcase their unfailing commitment to quality with a new demographic, Paul and Luke decided to help raise the profile of patisserie treats in Brisbane with a new store on Edward Street. A heritage-listed site was secured and an international design firm was recruited to bring the space on par with the product, settling on a colour palette of purple and gold paired with refined furnishings that prove perfect for parking over a melting moment or two.
While you’re not likely to hear Paul or Luke get boastful about the quality of their product, the proof is in the pudding – literally. Madders Brothers Patisserie has a repertoire of more than 80 types of stunning sweet and savoury canapes, with the Brisbane City flagship stocking 21 types daily. Each intricately crafted bite offers something new, with flavours alternating on a revolving basis to give the kitchen artisans scope to be creative. On any given day, one might catch bites including raspberry lamingtons, coconut caramel steamed pudding, tequila chocolate cactus tarts, coffee jelly marshmallows, apple trifle, green tea white chocolate mousse and mini macarons. Once you’ve accomplished the nigh impossible task of choosing a selection, order a drink to suit. Madders Brothers Patisserie stocks single origin Colombian coffee, TWG Tea from Singapore, San Pellegrino soft drinks and juice to accompany your nibbles. The coming weeks will see a seated high tea service debut, with guests able to curate their selection of treats from the daily selection alongside an array of scones and sandwiches.
