Cool off with Lavender Iced Tea

This Lavender Iced Tea recipe will quench your thirst and refresh after a busy weekend morning. Pour the mixture into a pitcher with fun-shaped ice cubes and strawberries to serve to friends over afternoon tea. A neat trick to keep your iced tea undiluted by the addition of iced cubes is to freeze some of the tea mixture in an ice-cube tray in advance, so only more tea melts into your drink, not water.

INGREDIENTS

1 litre boiling water
2 Twinings Afternoon Tea tea bags
1/2 teaspoon dried lavender
1/4 cup sugar
Sparkling mineral water
Fresh mint leaves

TO MAKE

Fill the kettle and pop on to boil. In a large Pyrex jug, prepare the tea bags by looping the strings around the handle so the whole bag won’t be lost in the liquid. Add the lavender to the jug. Once boiled, add one litre of water and let the tea steep for about five minutes. Remove tea bags and lavender and leave tea to cool, popping the jug into the fridge or freezer to speed up the process.

Heat a small saucepan over medium heat. Bring 1/4 cup of water to the boil and stir in the sugar until completely dissolved. Leave sugar syrup to cool.

Prepare four glasses and a pitcher with ice and mint leaves. Pour the cooled tea mixture halfway up the pitcher. Top with sparkling mineral water, and add a few dashes of sugar syrup to taste. Stir with a swizzle stick and pour into glasses.
