New Holloway Restaurant grows its own in West End

The creative gents behind Brisbane’s Holloway studio have now dreamt up a new restaurant, where cuisines of the world converge in a seasonal menu.

As glasses-frame lanterns cast intriguing shadows upon the walls and hanging plants peer down to take a closer look, the beautifully designed space of West End’s new Holloway Restaurant is luring in the locals thick and fast. Boasting a laidback vibe and warm hospitality, the historic 1930s building is a place where guests linger like old friends, sharing conversations over plates of wholesome nosh and fairtrade, organic coffee. In keeping with the Holloway philosophy and aesthetic, the space has been lovingly crafted by co-founders Raffaele Persichetti and Martin Gordon Brown, who have transformed salvaged and recycled materials into furniture and a multi-purpose bar.

The floors are a stunning jumble of misshapen native tree slices and natural stones, while feature details like an 1800s John Broadwood & Sons piano, handcrafted Frank + Mimi signage and artwork from Kizan Kakinuma have made the new restaurant and studio already feel like home. Organic evolution will see the venue’s belly slowly changing shape, with new wall art and additional greens due to sprout soon. Documentaries designed to inspire conversation will be sporadically screened on the walls, while the crew will continue to craft custom watches and boutique eyewear from the cellar studio.

Holloway’s sustainable approach has also been extended to the food menu, which will change often to reflect the bounty of seasonal, local produce available. The boys aim to grow as much as possible in the restaurant’s abundant backyard, boasting greenhouse and aquaponic system, while the remaining ingredients will be sourced locally, primarily from organic suppliers. The world-fusion cuisine will prickle nostrils and tempt tastebuds, with current offerings meandering from Sumatran rending and hand-stuffed duck ravioli to Sicilian ricotta torte and a Persichetti family recipe for mandarin marshmallow mousse.
