Modern moonshine has come a long way since the shiners in the backwaters of Kentucky. You’ll be pleased to know that the white lightning we’re referring to won’t impair your vision, but there’s no guaranteeing it won’t become a little hazy after a tipple or two. Enamoured by Melbourne Moonshine on a research trip, Geordie Smith and Bernard Puz decided to bring it home to Brisbane, making it the star of the bar in their latest project, GreenHill Bar and Dining.

GreenHill Bar and Dining is the newest addition to Petrie Terrace’s rapidly growing entertainment precinct, taking over the cosy space next to newly opened Fritzenberger. Much like its neighbour, GreenHill has completely transformed the space, thanks to the handiwork of co-owner and shop-fitter Bernard Puz. Exposed bricks, untreated wood and concrete finishes are contrasted by custom-made brass-legged tables and striking cobalt blue stools and booth seating, beckoning revellers to settle in and stay a while.

The handiwork of GreenHill’s other owner, Geordie Smith, comes in more edible form. Previously the head chef and owner of New Farm’s Little Larder, Geordie definitely knows his way around the kitchen. The menu features a selection of bar snacks such as dippable baked brie – need we say more? Okay, there’s also crispy quail eggs and twice-cooked lamb ribs, as well as ‘between the bread’ options like peanut-braised pork shoulder baguette and jaffles of the week. Striploin with bacon-wrapped greens and fries is on offer for those with a heftier appetite, as well as a cheese board and ever-changing desserts for afters. Behind the bar, various flavours of Melbourne Moonshine are concocted with the likes of smoky lemonade, ginger juice and spiced apple and honey syrup to create experimental cocktails, offered alongside wines, beers, ciders and spirits.
