G-Doggz Gourmet Hot Dogs + Bar opens in Fortitude Valley
Angelica and Brad Jolly of Alchemy restaurant in Brisbane City have ventured into Fortitude Valley with new G-Doggz Gourmet Hot Dogs + Bar, serving Australian-influenced American eats and boutique beverages.
The eatery enlisted Le Sebastian Bakery in West End to develop the bread roll recipe for G-Doggz, creating a bun that’s more steamed than baked, and soft and chewy in texture. The sausages are being made by local New Farm butcher Petersen’s Quality Meats, with all sausages gluten free and able to be served in a gluten-free bun. Employing the fine dining influence of Alchemy within the sausage recipes and ingredients placed atop each bun, the hot dogs are primarily American-meets-Australian creations, though French, Spanish and Korean flavours also come into play. The Devil Dogg pairs a pork, jalapeño and cheese sausage with chilli sauce and chopped tomatoes, while the Chow Chow pork sausage features wasabi mayonnaise and kimchi. The ten varieties of dogs can each be served as vegetarian, and hot chips with cheese sauce is sure to be a popular side snack for all.
Beer, wine, sparkling and ciders fill the fridge, and soon a mezzanine space upstairs will play host to DJs on weekends. The space sports an urban, industrial fit-out suited to its location, executed by local quiet achiever George Chebib from Brisbane Joinery and Shopfitters – whose work can be seen throughout much of Brisbane’s dining scene. Recycled wooden walls meet wallpaper from England and tables and seating from Sydney, while warm, exposed bulbs illuminate bright orange steel doors, dotted with the stickers of the haunt’s suppliers, builders and supporters.
