Fancy yourself a bit of a fish-and-chips connoisseur? But do you fancy yourself a fancy fish-and-chips connoisseur? Windsor’s Fuller & Hutch is taking the classic seafood offering to the next level, pairing traditional takeaway options with fresh bistro-style dishes. Don’t worry – potato scallops and prawn cutlets are still on the menu.

Fuller & Hutch is the latest offering from the couple behind Wavell Heights’ The Spotted Cod, husband and wife Doug McGarry (ex-Popolo and Libertine chef) and Kelly Fehlberg. Tucked away just off Lutwyche Road, the fish and chippery is divided into two parts – you can walk up to the takeaway counter or dine in at the sun-filled bistro. The space has been nautically decorated in the most non-kitsch way, with vintage maps and photographs, rope-bound glass buoys and even an old timber ship’s wheel set against a neutral colour palette.

Much like the space, Doug has kept Fuller & Hutch’s menu fresh and simple. Seafood and fresh produce is sourced as local, fresh and sustainable as possible, and the offering is kept minimal to ensure this. Your classic takeaway fish can be cod, Cone Bay barramundi, New Zealand snapper, Atlantic salmon or Queensland whiting, served with thick-cut chips and salad. You’ll find house-made potato and sweet potato scallops on the takeaway menu, as well as calamari, prawn cutlets and a range of hefty burgers and po’boys. If you agree that chips are merely a vessel for condiments, Fuller & Hutch can offer you house-made ketchup, aioli, tartare, chipotle chilli, seafood sauce or gravy. Yes, gravy. YUM. Those who are trying to be good (you know who you are) can ditch the chips to opt for healthy sides, such as jasmine rice and Asian greens. In the bistro, you can still get your classic fish and chips, or you can select from dishes like pan-fried snapper with semi-dried cherry tomatoes, roast sweet potato, preserved lemon and barley, or marinated-snapper tacos with avocado, salsa fresca, baja sauce and jalapenos.
