Fat Noodle has been a go-to eatery for Brisbane foodies for more than a decade. Providing a plethora of palate-pleasing plates made with the freshest Australian produce, this Asian-fusion dining hall is one of Treasury Brisbane’s crown jewels. The menu consists of reinterpreted traditional family recipes from celebrity chef and Fat Noodle’s head chef Luke Nguyen, whose family fled to Vietnam from Thailand when he was a boy. Renowned for his Vietnamese heritage cuisine, chef Luke also has family history in China, which was his inspiration for Fat Noodle and is reflective in the fusion of flavours on its menu.
A range of tempting eats fill Fat Noodle’s menu, from chef Luke’s beloved fat pho noodles to his fiery laksa and more. Dig in to a salivation-worthy selection of wok-made dishes like pork pad see ew, chilli and basil pork belly and steamed rice or a seafood stir-fry udon. You can also sink your teeth into some sumptuous street eats like nem nuong (grilled pork skewers with cucumber, mixed herbs, pickled vegetables and vermicelli noodles), prawn and pork rice paper rolls and chicken or pork banh mi. Small plates such as spring rolls, Luke’s Vietnamese chicken salad, salmon sashimi and fried tofu are also available, alongside a spectacular selection of dumplings and rice, noodle and soup dishes.
