Run by Ross Skinner and Michael De Laurence, the pair have owned a string of gourmet locales, from Sydney to Byron, slowly making their way up the coast to Brisbane. From La Belle Helene in Sydney, where Matt Moran trained under Michael, to Utopia Cafe in quaint Bangalow and fine dining restaurant Dish in Byron, the pair has perfected the creation of both the simplest of sweets to an indulgent degustation.

At Double Shot Espresso Bar, they’ve created the perfect little nook for a sweet treat and coffee while catching up with the ladies or lads, as well as meals of wholesome and heart-warming substance. If you can bear to resist the mountains of intricately compiled lavish tarts and danishes, Double Shot also offers light breakfasts like Stewed Rhubarb and Ginger with Greek Yoghurt or more substantial meals of Spanish Sardines, Croque Madame and Smashed Avocado.

The lunchtime offering boasts Smoked Trout Pate with toasted pane, rocket and marinated mushrooms, and a lush sounding Burratino – stretched buffalo mozzarella filled with a soft cream cheese, served with olives, tomato, basil, prosciutto parma and lemon press evoo. With everything prepared on location by Michael’s expert hands, try a slice of Winter Fruit Tart or the delectable-looking frittata of the day – this week’s teased us from the countertop, with juicy sundried tomatoes peeking out of the golden filling.
