The Gambaros open Cut Steakhouse & Tapas

With a focus on succulent steaks paired with crisp local wines, Cut Steakhouse & Tapas is the latest establishment from the Gambaro family. From the family’s first fish and chip shop on Petrie Terrace in 1953, the Gambaro foodie empire has surpassed the seafood lifeblood, homing in on the cattle end of surf and turf at the newly opened Caxton Street steakhouse.

Lukas McEwan (ex-Rockpool in Sydney) can be found in the kitchen, sizzling up Stanbroke organic, angus and wagyu steaks with wagyu-fat-roasted royal blue potatoes, rosemary and garlic. These menu centerpieces come topped with red wine jus, peppercorn, bearnaise or wild mushroom sauces, while braised beef short ribs are a meaty standout on the tapas menu. A selection of seafood also graces the offerings, including oysters two ways, pan-seared garlic prawns and fried squid, with the option to also top your steak with a little ocean-fresh produce.

A lengthy selection of wines has been sourced from Australia and New Zealand, with many a celebratory glass of French champagne also available. The wooden exterior of Cut Steakhouse & Tapas continues throughout the restaurant, framed by ranch-esque outback images and black-and-white photographs from the restaurateur family’s history. Seating includes white-cloth-topped tables that flow through the bar area into the back, with three private dining rooms also available for groups of six people upwards.
