Tacos and tequila – Byron Bay’s Chupacabra joins with Botero House to present A Taste of Mexico

If tacos and tequila are two of your favourite things, go right ahead and clear Tuesday October 22 from your diary. Byron Bay’s adored Mexican eatery Chupacabra is joining with Brisbane’s Botero for a mouthwatering exploration of Mexican cuisine for one night only.

Take a seat, stow your hand luggage and prepare your tastebuds for a culinary journey that won’t be forgotten in a hurry. Created by lauded chefs and long-time mates, Evan White and Dan Brown, who have both worked at some of the world’s best one-, two- and three-Michelin Star restaurants, the menu is designed to showcase traditional Mexican flavours as well as modern techniques and utilises exceptional local produce.

So what can you expect? Meltingly tender kingfish ceviche, barbacoa tacos loaded with short rib and cochinita pibil (which is traditional Mexican slow-roasted pork) with Northern Rivers-foraged greens. Next up is Ballina prawn inflado and to finish, chocolate pavé. Each dish will be perfectly paired with a selection of mezcal/tequila, cocktails and wine.
