Woo your beau with chocolate panna cotta this Valentine’s Day

A mighty slab of chocolate may be one way to your lover’s heart, but churning that chocolate into a homemade dessert is guaranteed to earn you a lifetime of love points. Prepare this dish the day before your date and leave to set in the fridge overnight. We’ve chosen to top our treats with flaked almonds, but stewed berries or whipped cream work just as well.

INGREDIENTS

1/2 cup milk
1 teaspoon plain gelatin
1 cup heavy cream
1/2 teaspoon vanilla
2 tablespoons sugar
150 g bittersweet chocolate
flaked almonds

TO MAKE

Pour the milk into a medium bowl and sprinkle in the gelatin. Stir gently for a few minutes until the gelatin softens, then set aside.

Place the cream, vanilla and sugar in a saucepan over medium heat and stir until the sugar dissolves.

Break 100 g of the chocolate into small pieces and add to the simmering cream, vanilla and sugar mixture. Stir until melted.

Remove the pan from the heat and whisk the warm liquid into the bowl containing the milk and gelatin.

When the mixture is smooth, pour into two clean glass bottles or panna cotta moulds, cover and place in the fridge to set for at least eight hours.

Before serving, melt the remaining 50 g of chocolate in a small saucepan over low heat. Pour into the jar to form a dark and decadent top layer. Sprinkle the panna cotta pots with flaked almonds, prepare for ensuing declarations of love and serve to your suitor.
