Chicken wings

Set your appetite on chilli chicken wings

Forgive us for our slovenly sins, but some nights just call for a mean plate of dude food and an adult-sized bib. We’re talking elbows on tables, eating with hands and probably even a few satisfied grunts. If you’ve got a raging appetite that only chicken wings will fill, give this lip-smackingly good recipe a try. Our only advice is to restrict consumption to only when you’re in the company of close family and friends.

INGREDIENTS

3/4 cup tomato sauce
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
2 teaspoons yellow mustard
1 lemon
1 clove garlic, crushed
1 teaspoon chilli powder
salt and pepper to taste
12 chicken wings

TO MAKE

Preheat the oven to 200°C. In a small bowl, combine the tomato sauce, Worcestershire sauce, soy sauce and mustard. Squeeze in the juice of one lemon and add the crushed garlic. Depending on your partiality to spice, sprinkle in a small amount of chilli at a time until you reach your preferred level of heat. Season with salt and pepper, and stir to combine.

Cut the wing tips from the chicken wings, place in a large bowl and pour the prepared sauce on top. Cover the bowl with cling wrap and let marinate in the fridge for several hours.

Transfer the chicken to an ovenproof baking dish and cook in your preheated oven for 30 minutes, basting with a brush every 10 minutes or so.

Increase the oven temperature to 220°C and cook for another 30 minutes or until the sauce thickens.

Transfer to a serving plate and serve with plenty of napkins.
