But now the 12th best restaurant on earth is inviting foodies near and far to take a peek into the kitchen and watch the miracles that can happen over the course of two hours, sped up into just three minutes. Think pomegranate and galangal root macaron with creamy chicken liver, king crab poached in beer and dill, and veal sweetbreads perfumed with liquorice and caramelised yuzu. At the top end of Elizabeth Street, the unexpected glow of lightbulbs and bursts of colour peek out of a converted garage, luring passersby inside. Upon closer inspection, Tacombi at Fonda Nolita is an intriguing Mexican den, bringing the beach vibe of the Yucatán Peninsula to the streets of New York. Owner Dario Wolos has paired with chef and Food Network personality Aarón Sánchez to devise a menu of tacos filled with lush slow-cooked meats and fragrant toppings, served from the Tacombi (taco plus VW Kombi). Forget staring at the wall, the TV screen or the mugs of other punters – inside Vault Brewing Company, your eyes will be glued to the fermenters behind the bar. The brews are made right before your beer-tinted glasses, meaning it’s only a distance of about five metres from ‘paddock’ to ‘plate’. In this short film by Empty Bucket Studios, brewery co-owner James Cain lovingly describes the unique space. Built in 1889 and previously inhabited by a number of banks, the Pennsylvanian brewpub boasts a 3628 kg vault door, which now guards the precious loot of kegs and ageing barrels behind the scenes. more
