Riser Bread evolves from loaf-slinging subscription to Toowong’s new bang-on bakery

When Riser Bread opened the doors to its new Toowong bakery last month, locals were already waiting. Such is the love for the concept, which started life as a COVID-era subscription service, that when the team's new bricks-and-mortar site opened it had legions of fans ready to buy up Riser's entire stock. It's easy to see why. The prospect of mortadella-filled croissants, Swedish cardamom buns, walnut and sea-salt scrolls, and loaves upon loaves of sensationally soft sourdough is enough to convince us to ditch work and join the queue. The best thing about Riser, though, is you don't have to leave – at least not straight away. The space has room to sit and dine, with a calm and casual vibe that is perfect for locals to linger longer with a coffee and croissant in hand. more

Agnes Bakery was born from necessity, but stayed around because of popularity. When the city shut down in the wake of COVID-19 restrictions, 'pivot' became the word of the day and experimental concepts started proliferating around town. Of all the operators that swivelled in order to keep their businesses afloat, few garnered such a rapturous public response as Agnes' pop-up woodfired bakery and bottle shop.
