During the months of May and June, the Bruny Island Cheese Co. surrogates will custom-craft the traditional wheels, carving your name (or special note) and the cheese’s date of birth into its rind, before sending you a birth certificate and portrait photo to gush over. Each handmade wheel will weigh between four-to-five kilograms and last several weeks after you’ve cracked it.
