Party planning made easy with brigadeiros
Traditionally served at children’s birthday parties and as a quick-to-whip-up dessert, brigadeiros are a fudge-like Portuguese truffle. It’s common for each batch to be rolled in a number of toppings – chocolate sprinkles are the time-honoured choice – with modern recipes using crushed macadamias or pistachios and shredded coconut. The mixture can keep in the refrigerator for up to a few days before being rolled into truffles.
INGREDIENTS
1 can condensed milk
4 tablespoons hot chocolate powder
2 tablespoons butter
Toppings
chocolate sprinkles
shredded coconut
cocoa powder
crushed nuts
TO MAKE
Add the condensed milk to a medium saucepan over low heat. While stirring, add the chocolate powder and butter, continuing to mix for about ten minutes or until the mixture has thickened and the bottom of the pan shows for a few seconds when you drag the wooden spoon through.
Pour the mixture into a container or bowl and set aside to cool to room temperature before putting into the fridge.
When the mixture is cool and you’re ready to roll it into balls, add your chocolate sprinkles or other toppings to a plate or bowl. Spread a little butter on your palms before taking some mixture and rolling into small spheres. Roll lightly through the topping mixture and place on a lined baking tray or drop into individual cupcake liners. Repeat with remaining mixture. Store in the fridge until ready to serve.
For an alternative (or possibly more adult) serving style, divide the mixture into tiny cups before cooling in the fridge. These can then be topped with a spray of sprinkles and devoured with a spoon.
