Wake up and smell the heavenly goodness of B’coz Bacon
Forget everything you know about bacon. If you take bacon seriously then you need make haste to the Boundary Street Markets and sink your teeth into the revolutionary morsels being whipped up by B’coz Bacon.
Liam Gardner loves bacon more than most people – so much so that he has spent a good portion of his spare time pushing the limits of how bacon can be incorporated into other dishes. After earning rave reviews of his bacon infused meals from friends and family, Liam recruited his brother James to put into motion a fully-fledged bacon dispensary. Why? B’coz Bacon, of course. Liam got his hands on a mobile trailer and kitted it out with everything needed to dispense bacon almost directly into the mouths of ravenous eaters.
Liam has spent months honing his recipes, narrowing down his repertoire into a few choice options to start, before blowing our minds further with an expanded offering in the future. First and foremost is The Kevin Burger – a titanic handful that boasts bacon-infused homemade beef patty topped with lettuce, tomato, pickles, cheese, caramelised onion, Gardsy’s Special Sauce and more bacon on a brioche bun. Also available is the Baby Got B.R.A.T. with thick-cut bacon coated in special panko crumb on sourdough with tomato, rocket, avocado and mayo, and The BAE – a bacon and egg burger with ample bacon and barbecue or tomato sauce – is available for breakfast. Finally – if you are still peckish – add a side of triple-cooked hand-cut potato chips topped with bacon, parmesan and herb crumb. If reading this is giving you the pre-bacon sweats, find Liam and James at the Boundary Street Markets in West End every weekend. If you need more information, head to the Stumble Guide.
