All it took was a plate of gourmet cheeses wafting past Justin Telfer when he was working as the manager of the high-roller room at a casino to trigger his ‘cheesemaker epiphany’.

A dedicated foodie with a particular love of cheese, he tracked down a course led by renowned cheese educator Neil Willman at the Melbourne University and was on his way to making his passion a full-time reality. A state border jump later, he was setting up his own business, Bangalow Cheese Co., in the beautiful Northern Rivers region of New South Wales.
