Aether Brewing set to turn on taps at Milton brewery and bar
Milton holds a special place in the hearts of beer-drinking locals thanks to its storied history as the city’s home of brewing. A new brewpub is set to open, just a short keg roll from Castlemaine Perkins, owned and operated by the minds behind craft beer upstarts Aether Brewing. Aether Brewing combines brewery, bar and kitchen into one modern-industrial venue that is more than just a spot to have a few jars.
Local craft beer lovers might already be familiar with local brewers Aether, but for those who haven’t had the pleasure of sipping on one of their brews, allow us to bring you up to speed. Dave Ward and Jimmy Young – the brains behind the beer – created Aether Brewing as a way to indulge their love of craft beer on a greater scale. Beginning with a simple pilot plant the duo created a range of signature beers, gradually earning a following amongst Brisbane’s craft beer enthusiasts. Throughout this infancy period, Dave and Jimmy started scrapbooking their dream venue, while constantly discussing qualities they believed their perfect bar would have. After settling on a refined but accessible atmosphere that is conducive to conversation, a solid selection of spirits and a menu of great food, the Aether team searched for the perfect venue to take the project beyond the confines of the garage – happening upon the current site of their new brewpub. Aether Brewing’s new bar, brewery and eatery sits inside a industrial space on Railway Terrace in Milton, blending an industrialised look with a raw chicness split over two levels.
The bottom bar is amply stocked with a huge range of wine and spirits, not to mention 12 beer taps pouring nine Aether brews and three guest drops, while upstairs boasts a smaller bar with six taps fitted. Speaking of beer, Aether has brought its brewing operation to the new location as well, installing new gear including vessels, fermenters and bright beer tanks, which will brew new batches as you put away current drops. We know what you’re thinking – what’s a brewpub without some quality fare to go with the beer? Well, Aether has that covered as well with a sizeable menu of meals created to be complementary to the drinking experience. A share plate offering includes the likes of tasting platters, pizzas and oysters, while larger meals along the lines of cubano sandwiches, smoked drunken pork ribs, crispy skin salmon and over-roasted baby cauliflower also feature.
