Thirty-one degrees is the perfect working temperature for tempered couverture chocolate. It achieves that beautiful sheen, that luscious consistency, that perfect snap when broken. But 31 Degrees is also the name of your new favourite indulgence – a store dedicated to delightful handmade and preservative-free artisan chocolates.

You made recognise the name already – 31 Degrees Custom Chocolates has been around for a couple of years. Local chocolatier Kaitlyn Fitzpatrick has been whipping up batches of her delectable pralines and truffles from the Wandering Cooks kitchen in South Brisbane since January 2014, creating custom orders via her website and the odd market stall. While working as a nanny in France, Kaitlyn fell in love with the abundance of artisanal sweet treats on offer. Inspired, she studied to be a pastry chef, and found true love when working with chocolate – and who can blame her? With her new-found love, she decided that the people of Brisbane should be treated to these European-style delicacies, but made with local ingredients.

Today, Thursday June 30, sees Kaitlyn open 31 Degrees Custom Chocolates’ first bricks-and-mortar store, located in Woolloongabba’s new Eden Lane precinct. The space is focused around the delicate attention to detail and magic that goes into hand making artisanal chocolates – a selection of sweet treats sit pride of place in the front counter, but you can also watch Kaitlyn work wonders in the kitchen through a wide window. Take your pick from more than 30 rotating flavours of pralines and truffles, including white passionfruit, Guinness, caramel, and dark chocolate raspberry, as well as salted caramels, rocky road and honeycomb. Chocolates are available to package up and take away (the perfect gift for a friend … or yourself), or you can take a seat in the laneway with a cup of tea of coffee. The coming months will also see the introduction of house-made pastries (pain au chocolat, of course), plus tastings, classes and dessert events.
