There was a time when Greek cafés were sprinkled across Brisbane like salt on a pile of hot chips. Before smashed avocado and kombucha and acai bowls, even before McDonald’s, there was the Greek café. Only a handful of Greek migrants traded in oyster saloons in Brisbane during the 1890s but by the 1920s a vibrant café society flourished in the hands of more than seventy Greek proprietors.
