It’s the Degustation that tastes like Queensland – a carefully curated eight-course culinary exploration of the magnificent Queensland coastline, from North Queensland to Bundaberg to Hervey Bay and Stradbroke Island!

Created to by Bacchus Head Chef Massimo Speroni in tribute to the glorious flavours of Queensland’s famous coastline, The Queensland Coast Degustation will be available for one month only from Thursday November 22 through to Saturday 22 December. The menu includes:

  • Oyster – freshly shucked rock oysters from Stradbroke Island with mayo and finger limes
  • Scallops – lightly charred Hervey Bay scallops with zucchini carpaccio and dill evolution
  • Snapper – North Queensland snapper with tomato ceviche, radish and cucumber
  • Bugs – Queensland bug risotto with lemon served al dente
  • Tuna – Mooloolaba tuna sesame tataki, grilled corn and sour cream
  • Champagne Lobster – Moreton Bay lobster with fresh pea textures
  • Sugar Cane – sorbet and Bundaberg Rum
  • Mango – a lasting memory
  • Petit Fours from Bacchus

The Queensland Coast Degustation can also be accompanied with paired wines and runs alongside the suite of acclaimed degustation experiences at Bacchus, testament to the restaurant’s commitment to continually create new and exciting dining experiences. The cost is $199 per person.
