Byron Bay institution Raes is teaming up with celebrated chef Kouji Kimura for a one-night-only culinary affair
Nestled within the boutique hotel Raes on Wategos is a gift from the culinary gods called Raes Dining Room. Boasting a modern Australian menu with a Mediterranean influence and overlooking the magnificent Wategos beach, this elegant dining experience is truly one of a kind. The culinary craftsmanship will be further levelled up on Wednesday November 9 when Raes partners with Plan Japan to welcome Michelin-starred chef Kouji Kimura to its dining room.
A native to Tokyo, one of Japan’s finest chefs and a master of aged sushi, Kouji Kimura is famous for helming his intimate self-named restaurant of which he has received two Michelin stars five years running. Kouji’s culinary prowess will be on display when he comes to Byron Bay favourite Raes for an epicurean event that is sure to have your senses singing. Together with Raes head chef Jason Saxby and his team, the chefs will serve a roster of decadent dishes for a seven-course tasting degustation at Raes Dining Room for one night only this November 9.
Of the culinary collaboration, chef Jason Saxby said “I’ve loved working with Japanese ingredients since my time at Quay … to get the chance to cook with one of the most respected and regarded sushi chefs in Japan is a once in a lifetime experience.” Tickets are $325 per person and are inclusive of a beverage package.
