Boy, our sunny southern neighbours sure have a lot going on at the moment. In case you’re not following the news on our Gold Coast site (which you can do right here), some seriously large openings have happened in the lead-up to the Commonwealth Games. As fans of a cheeky southern sojourn we were particularly excited by the news of The Darling and Nineteen at The Star, a brand-new luxury hotel and its accompanying rooftop venue respectively. The wait is over, the doors are open and we are thrilled to start planning our next holiday to check it all out!

If you’re wondering what all the fuss is about, you’d better believe that The Darling at The Star is already living up to the hype. From the moment you step inside the lobby and porte cochere you are greeted with stunning architecture, custom artwork, water features and grand chandeliers befitting a six-star experience. Then there are the rooms – the 17-storey luxury hotel houses 57 spacious suites, starting at a size of 70sqm and working up to an opulent 328sqm. There are 22 base rooms named the Jewel Suites and 21 larger rooms called Stellar Suites, all decked out with high-end finishes and luxurious touches. This leaves 14 suites that truly level up in the luxe stakes – we’re talking four Penthouse Suites, three Penthouse Spa Suites and seven Penthouse Deluxe Suites featuring a private billiard, media or exercise room.

Let’s travel up to the top floor and take a look at Nineteen at The Star, The Darling’s stunning rooftop bar and restaurant. The massive space has been masterminded by renowned Gold Coast restaurateur Simon Gloftis and entertainment maverick Billy Cross, who have teamed up to co-manage the venue. The venue features a 110-seat restaurant and a next-level luxe lounge bar, designed to fit a capacity of 300-plus guests. Award-winning firm Mim Design are behind Nineteen’s glorious interior, which perfectly captures its sky-high location with bold architecture, high ceilings and uninterrupted coastal views. When it comes to the food, the restaurant itself delivers a high-end, produce-driven menu with a focus on elegance and simplicity, all under the well-credentialed eye of head chef Kelvin Andrews.
