It’s a good sign when revellers are lining up outside a place on a Saturday morning before it opens. Within minutes of the doors swinging open, the cosy tables at Martha – in the Brooklyn neighbourhood of Fort Greene –are almost full. Those present are likely in the know about its culinary calibre – co-owner and chef Andres Valbuena has done time at both French Laundry and Mugaritz, evolving his style of what he calls ‘bastardised’ cuisine. Fusing Asian street food with a hint of haute cuisine, Andre’s farm-to-table fare includes duck fat biscuits with fried chicken, as well as pork belly bao and Beijing pancake.
