A haven for good coffee and good conversation, Saabi on Manson buzzes with community spirit. Perched on a corner of Manson Road in Hendra, Saabi has been a vibrant locale for a quick coffee, light breakfast and much chinwagging for the past four years. Lauren Jordan is the energetic owner behind the cafe, moving from a career as a personal trainer to opening Saabi on a whim. When she spotted the shop space for sale, she leapt at the opportunity to bring together her love of coffee and community, opening Saabi without a second glance back. A constant stream of customers glides through the door each day. Some will linger a while out the front, sipping on steamy lattes with their furry friend by their side, while others pop in and out for their first cup of the day, each customer greeted by name and a confirmation of having ‘the usual’. Like a family room filled with friends and strangers, Saabi is a vibrant, friendly hub, with no visit complete without a freshly baked sizeable muffin. The Weekend Edition caught up with Lauren to chat weekend essentials.

How do you like to start your weekend?
With a three-course breakfast at Saabi.

What’s your favourite thing to do on a Saturday morning?
My Saturday falls on a Wednesday. I like to get up early and take the dogs for a walk and then have breakfast with friends, all day long.

How do you like to unwind?
By going to the movies, hanging out with friends, exercising, painting and listening to music.

What are your essentials for a well-spent weekend?
Friends, laughter and no plans except joy-seeking.

What’s something you’ve been meaning to do on the weekend but haven’t got around to yet?
Spending more time in the art studio.

What’s your favourite thing to do on a Sunday evening?
An early dinner with a few friends and either a DVD or Mario Kart.

What are you looking forward to next weekend?
Having a few wonderful days in Byron Bay.

What are you reading at the moment?
The ecstatic poetry of Hafiz.

What inspires you?
The amazing people in my life.

What was your childhood dream?
To be true to my heart.

What has been your greatest achievement?
Creating a community within our cafe and a space where people can connect, feel free to totally be themselves and be inspired every day.

What is success to you?
The experience of joy every day.

What are your words of wisdom?
The universe is conspiring in my favour.
