Hakataya Ramen


Drawing a steady stream of locals and visitors from afar is Japanese noodle shop Hakataya Ramen. Specialising in traditional ramen with Tonkotsu soup, the broth is made in giant pots using specially selected bones of Australian pork and simmered for 39 hours. Four different flavours are available, including Shoyu (soy sauce), Shio (salt), Miso and Tonkotsu. Tender pork slices are laid gently on top of the bowl, which are cooked for hours with generous amounts of soy sauce and mirin. Spice lovers will appreciate the Miso Spicy-Men – a large bowl of spicy miso broth brimming with noodles cooked to perfection, tender pork slices that melt in the mouth and dried seaweed sprinkled atop.
