Mexican-themed bar Chilliwow opens in Fortitude Valley

Opening in the building formerly occupied by Barsoma, new bar Chilliwow will be the setting for many a Mexican-style fiesta.

A new venture by Nick Braban (formerly of Barsoma) and Adrian Mezzina and Steven Papas (of Oh Hello! fame), Chilliwow is a Mexican-style cantina that takes its theming seriously. Everything from the decor to the drinks list and menu has been carefully considered to ensure that ‘arriba’ is the first thought that pops into your head upon entering the bar. The opening of Chilliwow is part of the continued rejuvenation of Constance Street in Fortitude Valley, which recently welcomed Alfred & Constance to the neighbourhood.

The skeleton of Barsoma remains intact, but the fit-out has been given a complete overhaul, with vibrant hues splashed on the walls and furniture, and Mexican relics and artwork occupying every blank wall. Tables surrounded by stools encourage guests to mingle, while Frida Kahlo eavesdrops on the more private conversations happening in the booths.

Chilliwow is a bar at heart, with Mexican beverages being the focal point of the drinks list. Nick drew much of the culinary inspiration for the food and drink offerings from his travels through Mexico, and has crafted a menu of beverages that includes a premium selection of tequila (including aged 100% agave tequila), Mexican beer and aguas frescas – a drink often served on the footpaths of Mexico. The food offerings are simple, but substantial and designed to fit with the theme. As the name suggests, chilli dogs are on offer, as is a range of tacos.
