Wild Canary settles inside Brookfield Garden Centre
Set amongst the lush green backdrop of a sprawling edible garden and neighbouring nursery, Wild Canary offers fresh local fare in an idyllic setting.
As you amble through the leafy green beds of Brookfield Garden Centre with the scent of mint and Thai basil filling the nostrils, it’s clear the symbiotic coupling of nature and food is the heart and soul of new cafe Wild Canary. Opening last week after years of contemplation, the botanical bistro is the handiwork of Scott and Robin McLay, who bought the nursery on a whim almost six years ago.
Each morning before service, you’ll spy head chef Glen Barratt and head gardener Alex Robinson foraging in the kitchen garden, picking fragrant herbs, roots, spices, edible flowers and produce for the day ahead. Organic, permaculture and biodynamic principles guide the gardening process, and the daily harvest is supplemented by ingredients gathered from sustainable local farms and regional producers. The available produce dictates the seasonal menu, which currently features delights like honey from Fig Tree Pocket, bananas from Brookfield and organic rhubarb from Mount Tamborine.
Open for breakfast and lunch seven days a week, the licensed bistro will fill your cup with regional wine, beer, cider or Allpress Coffee, while the cabinet is packed with freshly baked pastries. Breakfast ranges from a fresh watermelon and strawberry salad with rosewater syrup and lemon balm, to a gardener’s feast of pork and fennel sausage with Gypsy ham, heirloom tomatoes, avocado, ajvar, Olympus fetta, poached free-range eggs and sourdough toast. The lunch menu is equally as tempting, with dishes like organic chicken terrine with tomato chutney and green salad, Chermoula Gold Coast tiger prawns with pineapple tabouli and lime, and twice-baked goats cheese souffle with walnut and pear salad.
