Raw cookie dough pie, lemon and coconut cake, chocolate-dipped pistachio shortbread – these are just some of sweet treats made by local baker Two Teaspoons that have been making it very difficult to keep our eyes on our work and not dreaming of our next sugary bite.

The creation of Carissa Saxby, Two Teaspoons baked and raw treats have been lining the counters of The Odyssey Project in Milton and Two Trees at South Brisbane of late. You may have also recently spotted Carissa’s clusters of gluten-free carrot cake, chocolate fudge brownies and raw blueberry cheesecake slice on weekends at the Boundary Street Market. While Two Teaspoons no longer has a dedicated stall there, the lovely folk behind West End Tea Co will still be offering up the decadent sweets each weekend.

After working in architectural illustration for more than ten years, Carissa and her partner wanted to embark on a new business venture, one of which would possibly indulge Carissa’s love of baking. Two Teaspoons was result, with Wandering Cooks providing the kitchen space and the nurturing support to help the small business grow. The brand now whips up weekly wholesale and private orders, and provides the saccharine goods to match your cup of coffee at Two Trees, The Odyssey Project, The Edge and The Blue Poppy. With an increasing number of people tailoring their eating because of food intolerances or lifestyle choices, Carissa wanted to create delectable vittles for these wholesome folk, and so expanded her baking skills across to raw non-baking too. The Two Teaspoons raw treats are either gluten-, dairy-, refined sugar-free or vegan, or a combination of all, while baked goods dabble in the gluten-free tag also.
