The Milk Factory Kitchen & Bar drops anchor in Brisbane

The team behind Shady Palms has transformed an old South Brisbane venue into a nautical-themed haven complete with floating menu, street-art murals and a carefully selected list of drinks.

The Milk Factory Kitchen & Bar is not your typical pub, but it may quickly become your new favourite. After long-standing South Brisbane establishment The Joynt closed its doors earlier this year, Mal Gill, the mind behind Shady Palms in Stones Corner, jumped at the chance to take over and apply his personal flair to the inner-city venue.

The Milk Factory has a distinct theme that sets it apart from many of the venues around town. This bar is nautical themed, with everything from deep-sea diving apparatus to colonial-era sea craft murals contributing to the aesthetic. Anchors adorn the walls and recycled-scuba-tank light fixtures illuminate the space. Street artists Sam Hill and Fintan Magee have come on board to add their personal touches to the space, which also includes a hefty wooden bar and eclectic mismatched furniture.

Head chef Asher Blackford’s (Canvas, Laruche) bar-food menu is similarly inspired by sea travel. Charting a journey around the world, each meal on the menu will be influenced by a different stop on a map – superimposed on the menu itself. The cuisine ethos is playful, creative and witty, allowing the kitchen staff to mix up the formula and shuffle the menu every three months. Under supervision from drink maestro Daniel Gregory, the bar has freshly installed beer taps, which have been absent from the premises since the 1920s. Serving specialty craft beers, hand-picked wine and top-notch cocktails, The Milk Factory Kitchen & Bar is sure to keep patrons coming back time after time.
