The Grocer: Chipotle
The chipotle is a chilli variety that is used commonly in Mexican and Mexican-inspired cuisines, which can add a tasty kick to your meals.
Chipotle peppers are a type of jalapeno that has been kept on the bush to ripen until the end of the growing season. The jalapeno turns dark red when fully ripened, removing most of the chilli’s moisture, then smoked and dried for several days – becoming a chipotle. The chilli carries a distinct smoky taste, making a great addition to several dishes. Whole chipotles are commonly added to soups or slow-cooked stews, as well as in braising liquid for meats. Many recipes use chipotle peppers in adobo sauce, which can be purchased canned.
If you are looking to add a bit of spice to your home cooking, try whipping up a few impressive dishes using chipotles. Make some roasted red pepper and chipotle pepper in adobo angel hair pasta, chipotle chicken chilli or beef chilli, and chipotle salsa baked chicken. Chipotles can also be incorporated into homemade condiments – try making some guacamole with some added chipotle, black bean chilli or chipotle honey vinaigrette.
