The Defiant Duck waddles into Newstead

The Moubment Group are at it again, this time opening an American-style food and drink pavilion. Overlooking lush greenery and the iconic Gasometer, The Defiant Duck has been created with one major goal in mind – to ensure you have a … ahem … quacker of a time.

The Defiant Duck is the latest instalment from the creative minds behind Gerard’s Bistro, Gerard’s Bar & Charcuterie and Laruche, who are spreading their wings across the other side of the Gasometer from sibling venue Hatch & Co. The pavilion-style venue is flooded with natural light through its wide bi-fold doors, with tables spilling out into the alfresco dining area overlooking the botanical surrounds. There is no denying that The Defiant Duck is conducive to drinking – as you walk in you’ll feel the urge to pull up a stool at one of the central high tables as you make your selection from the 24 craft and local beers on tap, or three wine taps if beer tends to ruffle your feathers.

On weekdays, you can mosey up to the wide express coffee window, where The Defiant Duck is serving up an exclusive Bear Bones Espresso coffee blend, as well as takeaway breakfast and lunch options for those on the go. If you’d rather settle in for a long afternoon or evening of grazing, take a seat and let your mouth begin to water as you run your eyes over the menu. While the kitchen is certainly plating up American-style fare, this isn’t your run-of-the-mill burger and hot dog joint – The Defiant Duck has that certain finesse that the Moubment Group does so well. The star of the kitchen is 100-percent charcoal-powered Josper oven, which is pumping out dishes such as Coca-Cola wagyu beef ribs with mustard mayo and burnt shallots, and the toasted Reuben sandwich on rye. You can snack on moreish morsels like mini corn dogs, mac ‘n’ cheese croquettes and fennel-cured pork crackling, or those after something a little lighter can opt for the likes of sashimi-style tuna salad with watermelon, pickled fennel, smoked almonds, black sesame seeds, rocket and blood orange dressing. Come Saturday and Sunday, The Defiant Duck also serves up dine-in breakfast options in addition to its all-day menu.
