Bacchus opens Soleil Pool Bar in South Bank

The award-winning team behind South Bank restaurant Bacchus has unveiled a sleek new bar perched on the podium level of Rydges South Bank.

Taking its name from that giant glowing orb suspended in the sky, Soleil Pool Bar wraps around the Rydges South Bank Brisbane pool and peeps over Grey Street. Combining timber features with a palette of gold and white, the venue offers a warm and inviting space to linger with glass in hand, as DJs create a pool party atmosphere. Take a seat in the main bar area, find a cosy hideout or soak up the sun on the pool deck. Eyeballs are drawn up towards the massive LED screen embedded in the ceiling, while a tempting array of throat ticklers peek out from timber cubes in the central bar.

As the chic sister venue to culinary standout Bacchus, Soleil offers divine food offerings from morning through to night. In the morning, graze on a granola parfait or basket of pastries, before moving on to an afternoon menu featuring dishes like octopus and chorizo, savoury mince jaffles and charcuterie selections. From 6:00–10:00 pm, the evening bar menu meanders from lighter options like prawn and basil fritters with pineapple yoghurt through to wagyu beef burgers, pizzas and sugared doughnuts with a white chocolate and olive oil dipping sauce.

But of course, the drawcard here is the cocktail collection. The Soleil bar team has crafted a refreshing line-up of tonics, ranging from the Passion Is The Colour Red cocktail of Belvedere Pure Vodka, lemon, Rizzardi Prosecco with rose and raspberry sorbet and a finishing spritz of rose water, to The Black Barrel Inquisition of Mount Gay Black Barrel Rum, All Saints Rutherglen Muscat, Angostura and chocolate bitters served with cinnamon and clove smoke. Those not in the mood for a cocktail can choose from the extensive range of punches to share, international and Australian wines, and tap or bottled beer.
