Make chilled Sangria Popsicles this summer

Adding a little frozen fun to our favourite Spanish cocktails is this recipe for Sangria Popsicles. Enjoyed either on their own as an ice block or used as a giant ice cube to chill and flavour an additional glass of wine, Sangria Popsicles will add a dash more merriment to your family Christmas lunch.

INGREDIENTS

1 bottle white wine
1 cup peach schnapps
2 cups white grape juice
1 teaspoon sugar
2 teaspoons orange juice
1/2 cup raspberries, halved
1/2 cup grapes
1/2 cup oranges, halved and sliced
1/2 cup pineapple, thinly sliced

TO MAKE

Chop and slice all of the fruit and place in a large pitcher or bowl. Add sugar and orange juice, stirring until the sugar has dissolved. Add the wine, schnapps and grape juice and stir well.

To make the popsicles, use ice-block moulds or line a tray with small plastic cups. Divide the liquid into the cups, making sure some fruit makes it into each one. Partially freeze the cups for about an hour before adding a Paddle Pop stick to the middle of each cup. Then let freeze for at least four more hours.

Serve either on their own as popsicles or add to a wine glass, pouring more wine over the top and adding a few fresh lychees and raspberries to the glass.
