Sustainable food truck Puerto Taco hits the streets

Boasting fresh Mexican in the kitchen and solar panels on the roof, Brisbane’s newest food truck is set to spice up the local street-food scene.

Brisbane’s fleet of food trucks gained a welcome new ally this month, with Puerto Taco rolling out of the workshop and into our food-focused reveries. Kitted out with eco-friendly solar panels by Sunshine Coast company Tranquil Energy, the food trailer is dishing up Mexican tacos crafted from fresh seafood, slow-cooked meats and homemade salsas. The mobile Mexican joint is the brainchild of local couple John McIntosh and Justine Yeong, who were inspired to launch a street-food van after eating their way through Mexico, South and Central America last year.

Officially launching less than two weeks ago, Puerto Taco has been pulling up stumps at markets and breweries across Brisbane, with plans to park at the Bounty Boulevard State School Twilight Market from 3:00–8:00 pm this Saturday November 8 and North Lakes Farmers Market from 6:30–11:00 am Sunday November 9. Wrap your mitts around the signature Ensenada-style fish taco featuring New Zealand hoki and drizzled with lime mayo, an eight-hour slow-cooked taqueria beef taco with chipotle mayo or a Yucatán pork taco with pickled onion. Homemade salsas including roasted chilli, jalapeno verde, habanero and chipotle will clear out the nostrils, and stay tuned as Puerto Taco rolls out an expanded ocean-inspired menu over the coming months.
